How to cook roast beef and make gravy?

I have never sucessfull cooked roast beef, without it being tough, but am cooking for friends on Sunday and they love beef. Which is the easiest cut to do and how do I do it? Also , I don't like gravy myself, so never both, but I should learn. Whats the easiest way, without having to add bisto?

My top tip is to buy the beef from a reputable butchers, not the supermarket. I spent years thinking I couldn't roast beef then when we changed to buying to a fab local butcher, I realised it wasn't me or my oven... Second top tip is to let it rest before carving.

On "how to" - I know not everyone rates Delia, but I do, certainly for traditional stuff like roasts and gravy

Thanks for your advice. Unfortunatley left it too late in the day to get beef I wanted from butchers, so went for brisket, so going to do an old fashioned pot roast. Not done one of those either, but it should be straight forward! I see you are from Manchester, which butcher do you use?

The easiest way is to cook it in a slow cooker, then it doesn't matter if it is brisket.

I have just put a piece in mine which will cook until about 6 and be gorgeous.

my DH makes the best roast beef, he puts it in a casserole dish with water and slow roasts in the oven, then uses the juices or the gravy, absolutely delicious

Buy roasting bags.
Put beef in bag with chopped onion and some cornflour.
roast according to instructions.
let meat rest for a bit in bag after cooking, than remove meat from bag.
Tip onions and juices from bag into pan and heat until it reduces and thickens.

Tah-Dah....roast beef and gravy!!
