can a silverside be wellingtoned?

It would be too tough, definitely. Fillet is best for this.

figured - mil gave us a piece and i normally like to do a wellington new years eve... ah well! Is roasting the only way to go? I might roast it rare and put it into yorkshires with horseradish cream and watercress....

i cook silverside in the slow cooker, either overnight or all day on the low setting..

last time i put in a bottle of ale, some mushrooms, shallots, stock cube & the silverside joint.. mmm, mmm DELICIOUS!

also, if you take out the joint to slice (well it more falls to pieces because its so tender!) and thicken the liquid in the pot with some gravy granules, then put the sliced meat in to 'soak' for the last 30 minutes before serving - it is even yummier (and would be a great filling for yorkshire puds)..
