Freezing bananas

When you freeze bananas do you just bung them into the freezer unpeeled or do you have to peel and / or chop them first?

I think you peel and chop them, and put them in a bag with raspberries to stop them going black?

Bananas can only be frozen to use as puree in cakes, breads, etc as they will discolour. Use fruit that is just ripe, not over ripe.

Peel and mash with 1tsp lemon juice. Pack in rigid containers leaving 1 inch headspace. Remove the air, seal, lable and freeze.

When thawing, don't open the container but put in the fridge to thaw for about 6 hours than use immediately to prevent more discolouration.

frozen mashed banana ( I don't add lemon juice it stays cream coloured maybe cos it's eaten within days ) is a delicious alternative to ice cream too.

Oh don't tart about - if you're using them in baking (which is all they'll be good for) just peel and shove them in a bag or plastic box. Overripe is fine. Great for banana cake.
