Watching Nigella making rocky road last night had me dying to make it, but I dunno if it would be quite so exciting without the marshmallows...

you can get them in america. google it, you might be able to get them shipped over.

or, if you are ok in the kitchen you will find lots of recipes to make your own online

my googling has just told me that halal ones may have fish crap in them. And making them sounds a bit complex, anything requiring a sugar thermometer is more faff than I can be arsed with. Might try to find some to buy...

Gelatin.
The bastard stuff is in loads of sweets: marshmallows, haribo types, etc.
They only stopped putting it in Polps a few years ago - yes, really!
It could easilt be replaced with Agar, but it would cost more.

There's a thread somewhere on here with a recipe for a marshmallow cake topping (which is veggie). I wonder if it could work for Rocky Road (it's runnier than packet marshmallows). can't find the thread, but here's the recipe

seriously though, i wonder what I would need to do if I wanted to make them to sell. do you reckon i'd have to have health and safety round to inspect my kitchen and stuff??

yeah, I think you do. I've a friend who caters from home and she had to jump through all kinds of hoops. It's a shame, because I was thinking about doing something food based from home recently, but am not sure I can be bothered.

Still, it may not be that tricky, and you might not be as fickle as me. Give it a go!

You can use Irish Moss as an alternitive to Gelatin.
You can buy it from most good herb shops.

Hugh Fernly Whittingstall did a really good recipe for marshmallows a few months ago on his River Cottage prog.
I'm sure it could be adapted for vegetarians.
Will try to find it.
