Why is my cinder toffee not right or am I being impatient

Made using nigellas recipe, hers was crumbly and light, mine seems chewy and does not seemed to have risen.

I noticed that other recipes use vinegar is that what has gone wrong?
Does it just need longer to set and then everything will be OK?

has it got bicarb in - cos vinegar reacts with it (as in volcanoey style) adn that might be what causes the crumbly lightness.

I've just made the Nigella version and mine was very bubbly and volcanoey but although it was OK before I put the bicarb in, it burned once I added it even though it was off the heat.

I tried again with a recipe which was v. similar but had 40g butter and 1/2 tsp vinegar but only 1 tsp of bicarb. This one tasted nice, but wasn't bubbly enough!

Don't know what went wrong with yours, but if I was to do it again I'd use the second recipe but add 2 tsp bicarb and the vinegar.

I've given up though and made chocolate fudge instead!
