Aubergine question

I haven't used aubergine for years and years. Suddenly remembered that they exist, but the first two I have sliced up have dark brown bits in. Aubergines are supposed to be creamy white inside, aren't they??? [hmmm] These are 'not nice' then, aren't they?!

How long did you leave them sliced for? They do go brown when they're cut. There are seeds in the middle which are often slightly darker. Have a sniff, what do they smell like? If they're off they'll smell horrible, rotting veg like. If they're ok, they'll smell of nothing really.

I have never seen an Aubergine with a creamy white inside. They are sort of off white with black bits, which are the seeds. Or even some brown parts, like this.

Forgot to say, Eggplant is what Americans call Aubergine, so same thing!

I think, though I might be wrong, that they get brown bits when they are older/ bigger. It's still fine to use thought I might be inclined to salt it before I used it as I think the ones with the brown bits are more bitter. They go brown and soft on the outside when they go off.

The older they are the more brown bits. They are more likely to be a bit bitter, but should still be fine to eat.

(Which I now notice BirdyArms has said already)
