how can I make buttermilk?

Do you just add lemon juice to milk? and if so in what quantities or am I dreaming!

I didn't realise you could make it yourself - or is that a bit like making your own mozzarella (saw a link to a recipe for this on the Times t'other day - barmy).

Am intrigued...would be useful as I can never find it in the shops when I need it.

lemon juice to skimmed milk. no particular quantity jsut enough to acidise it and make itlook abit curdledy

Perhaps you just blend half a pound of butter with a teaspoon of milk? Yum!

To make butter, we used to take the layer of cream from the top of the milk, until there was about 1/2 pint in a sealed container. Then shake, for bloody ages. Your arms kill you as you shake it so long.
When there is a solid lump inside it is done. The liquid is then buttermilk. The solid is butter.

it is a bi product of butter making but you can substitute it with lemony skimmed milk to get teh same effect when baking.
