roast veg without goose fat?

Just had a thought, I love potatoes roasted in goose fat but have a vegetarian friend joining us on christmas day this year. What is the best oil to use for a vegetarian option.

Any thoughts on vegetarian main course recipes would also be welcomed

I am veggie and have always roasted in olive oil, with lots of seasoning.

I just use sunflower oil, for veggies and roast potatoes.

I always use olive oil (not virgin) for roasting, because I only have two oils in the house: Virgin olive oil and normal olive oil. It comes out fine.

Trex gives the same sort of crispness as goose fat. Better than olive oil and great for pastry too.

solid vegetable fat

texture is like lard, but made from veg oil - makes fab pastry too
