Left-over mash - How do I make fishcakes?

Got some mash left over from dinner (potato with a bit of parsnip thrown in!)
I also have lots of tinned tuna. So do I just mix it all together? Does it need an egg or something to bind it?
Should I coat in bread crumbs?
Fry or bake?
I await your culinary advice with baited breath!

It's been a while since I made them. I didn't use breadcrumbs don't think I used an egg, just mix together, pat into shape and put into fridge for half hour, then fry.

Can add egg or not. Binds better with egg and stays together better. If not using egg add some milk to the mash to make it less dry. you can coat in breadcrumbs too if you fancy. I prefer to fry as not so dry but hey it cooking experimentation is part fo the fun

OOOhhh.. My DD (10m) loves tuna fishcakes. I add the tuna to the mash along with a finely chopped red pepper, some spring onions (whatever you fee like really - DD love mushrooms, chilli sauce and peas in it too - strange child!). Add an egg to bind it together (depending on the mash it doesn't always need it - if you do and it goes too mushy add some breadcrumbs). I then dip the fishcake in seasoned flour, then a beaten egg and finally in breadcrumbs. I fry them in a little oil - they shouldn't take long to cook.

I wouldn't bother using egg to bind it, as the tuna will be quite wet. And if it's tuna in oil, then it will also act as a binding agent.

But you do need to dip them first into beaten egg and then breadcrumbs to get that nice, crispy coating.

Also second adding some spring onion or onion to the mix as it gives it a little more flavour.

Thank you ladies! That's tea tonight sorted.
I shall purchase some spring onions to augment my fishcakes.
One last question. Homemade breadcrumbs or the orange stuff in a packet?
