Galaxy bread and butter pudding; simply a bread & butter pudding with a load of melted galaxy mixed in - it's delicious!

Alternatively, a super but more summery recipe is a frozen berry bombe. Simmer some fresh or frozen mixed summer berries (& sugar if needed to sweeten) and make sure they don't simmer to a pulp. Get a pyrex or other suitable bowl for freezing, break up some meringue (cases/nests are fine) into the bowl and add a large carton of cream. Carefully swirl in the cooled berry mix, so that the berry colours create a swirly effect with the cream & meringues. Freeze. Take out of the freezer about 30 mins before you want to serve and turn the bowl upside down. If needed, run a palette knife around the edges to help it out. Serve. Smug look on face is optional as you tell your guests it took you ages

Both of these recipes are ridiculously easy but look and taste fab!

here and you can dress it up with raspberries if you want to but it certainly doesn't need it

There is a recipe from the Ivy I think -
Buy frozen mixed berries, put them in a martini glass or fancy dish warm some white chocolate - decent quality until molten
Pour over berries and serve immediately
Very tasty, very chic

This recipe looks a faff, but isn't as bad as it appears. the extremely bitter pots are v impressive and chefy.

Very bitter individual chocolate mousses

Makes 4

ingredients

175ml double cream
1/2 vanilla pod
75ml milk
125g v dark choc (at least 70% cocoa solids)
2 egg yolks
1 heap tsp icing sugar

Preheat oven to 140C

Method

  1. Warm cream and 1/2 vanilla pod in saucepan over gentle heat, whisking to disperse seeds. Leave for 30 mins to infuse
  2. Melt chocolate in milk in another saucepan over gentle heat.
  3. Beat egg yolks and sugar
  4. Carefully add chocolate milk (cooled slightly) and vanilla cream to egg yolks & blend thoroughly. an electric hand whisk is ideal for this.
  5. Pass mixture through fine seive (or tea strainer)
  6. Pour into 4 ramekins
  7. Stand the ramekins in deep dish and then fill round them with boiling water.
  8. Cook in the oven for 45min-1hr. When they are cooked they should be puffed up and spongy, but may appear almost burned. This is v important for a thick crust.
  9. Cool for at least 6hrs in fridge before serving.
