Shortbread recipes for some toddlers

OK - Ds came home with a lovely chocolate snowman from one of the other babies at nursery

So I thought I would be all domestic-like and make some biscuits to share around his room. They are all around ds's age (11mo) so I thought I would make some cranberry and white choc shortbread but would like some help with t the recipe.

The recipe I have is

125g butter (I use unsalted)
55g sugar
180g flour.

I figured that the white choc & cranberry will make them quite sweet so was thinking of reducing the amount of sugar in them.

I was thinking of using demerara sugar as well rather than caster sugar would this work?

Any tips/help?

I always use multiple (ounces) 1 sugar, 2 butter, 3 flour. Often brown sugar or wholemeal flour or a mix of each.

Cranberry might be a bit 'grown-up' for little ones - my older children won't eat them. Maybe raisins, or just white and dark choc chips?

I'm sure that the staff will be v appreciative!
