American style Buttermilk Pancakes

Can someone help me with this?

Have spent more time than is probably healthy in American diners eating pancakes, but back in the UK I just cannot recreate them.

Have tried Delia's recipe but its too eggy and didnt taste right..

Have also looked at the commercial mixes but they seem very full of additives.

Any hints or tips?

Well, as an American, I never cook my pancakes with lard, but with butter.

I also never use more than 2 eggs.

Also, the batter shouldn't be completely smooth, but have a few lumps. They smooth out when you cook them.

And you know it is time to turn them when they are all bubbly on top.

I hope that helps! I'd give you a recipe, but I don't really use one!

If anyone does have a recipe I would be very appreciative (as would the DDs, because it would mean I'd stop experimenting on them..)

daddycool gave me his recipe once which is v good

This is a Canadian recipe so everything is in cups and spoons. A cup is a standard coffee mug, a tbsp a large serving spoon and tsp a desert spoon... combine: 3/4 cup self rising flour 1 tsp baking powder (if you got it) 1/4 tsp salt 2 tbsp sugar 1 egg 1/2 cup of milk 2 tbsp melted butter combine dry and wet separately then combine together. Mix well and let stand in fridge for about 1/2 hour pour onto hot buttered frying pan and flip when bubbles appear on top. cover with lots of butter and maple syrup.

I did that a few times then discovered instant american pancake mix in costco which tastes jsut like pancakes served in american restaurants, so I cheat now.
