anybody have any recipes for a meat free (or pork free) stuffing

i have an intolerance to pork (not bacon thou) and was wondering if anyone had an idiot proof recipe for stuffing, i'm fed up of not getting stuffing on xmas day!

just buy a pack of stuffing and make it up.

the london spice comapny sage and onion is lovely

I never use meat in stuffing. Always use my Mum's recipe. Breadcrumbs, finely chopped onion, dried parsley and thyme, grated apple and a good squirt of lemon juice. Melt some butter and mix it all together. Put in a dish with some butter dotted on top and cook in oven.

Have no idea of quantities though as I judge by how it looks. When still dry you should be able to see the breadcrumbs but also see lots of the dried herbs!

I do classic sage and onion. Boil peeled onions until soft in stock, chop finely, mix with breadcrumbs and lots of chopped sage. Season generously. You can add an egg to bind it if you like.

Also, how about using some of the middles from venison or beef sausages?

Also, chestnuts can make an excellent non-meat stuffing with plenty of onion/breadcrumbs/herbs. You can buy ready-peeled frozen or vacuum-packed chestnuts.

Fry some shallots, finely chopped celery & mushrooms plus a small piece of crushed garlic. Add breadcrumbs & toasted pine nuts, walnuts or hazelnuts, any combination of nut you want. Then add chopped apricots, prunes or figs, some grated lemon and orange zest and juice of a lemon. Add freshly chopped herbs or dried herbs to taste. Add an egg if mixture too dry. Pack the lot into a greased terrine or small loaf tin and bake at 175 for about 30 mins with a piece of greaseproof paper on top to stop it burning on top. Its lovely! And great sliced cold with sandwiches.
