how do you make peppermint creams?

hi I can't find a recipe fom simple peppermint creams to make with the kids, can anyone help pls

450g icing sugar
2 egg whites
food colouring
peppermint essence

Sift the sugar. Place the egg whites in a bowl and beat lightly with a fork, just sufficiently to break up the albumen.

Add half the icing sugar and stir until well mixed, using a wooden spoon. Beat for 5 minutes. Add the rest of the icing sugar and the essence until the mixture is stiff. You may need to add more icing sugar.

Separate the mixture into bowls and add different food colourings to each.

Roll out and cut out into shapes. Lay the sweets out on sheets of greaseproof paper to dry out.

thank you thats great......now, I have all the ingredients except peppermint essence! Do you think they would be ok if I used vanilla essence instead? Or shall I venture out in the pouring rain and brave the weekend supermarket hordes just for a tiny bottle of peppermint essence?

I wouldn't make it with vanilla essence tbh. Don't imagine it would be very nice tbh.

lol you are probably right, defeats the whole purpose of peppermint creams doesn't it? Also just found I have no icing sugar either.......ho hum shops it is.

I can't seem to find one without egg whites in, but I don't like using them in cooking when it's for the kids. Does anyone have an egg free version?

and definite no to vanilla essence - rain it is :-)

You can buy a product from cake decortating shops, called merriwhite which is a safer version of egg whites used in making icing etc. You could try using that instead.
