OK, I have got pork chops out of the freezer but don't know what to do for dinner.....

Have got potatoes, mushrooms, carrots, brocolli and usual store cupboard stuff.

Need some inspiration.....

mexican pork chops

do you have:
cream
onions
paprika
chili
passata or canned tomatoes?
nice pyrex or similar dish

Have you got any wholegrain mustard?

A little bit of that in mashed potato with chops is gorgeous.

Then I would do steamed veg and gravy. Mmmmmm.

Make a slit in the chop and put a ball of stuffing in, then grill. Make a suace with mushrooms, wholegrain mustard and creme fraiche, serve with mash pots and steamed veg.

This is what we're having for dinner tonight!

I put them in an oven dish, splash them generously with Worcestershire sauce and give them a good grind of black pepper, then cover each one with a generous dollop of barbecue sauce (as in a ketchup-type sauce), then turn them over so that they're coated in the sauces and roast at a relatively low temperature for up to 2 hours.

You need to keep an eye on it to make sure that the sauce doesn't dry out too much as it will quickly start to burn, so keep adding a little bit of boiling water.

When cooked, they will have gone a little bit sticky from the sauce and will be meltingly tender.

if you have mango chutney and orange juice and balsamic vinegar ( though not entirely necessary for it to be edible), you can:

pan fry chops and leave to one side whne cooked. Add 6 tablespoons of juice, 4 of chutney and 2 vinegar if using to pan juices and simmer until thick. Serve over chops. I usually fry up some onions and mushrooms and add the sauce to them , simmer and pour over chops. Or you could just mix up the above ingredients, pour over raw chops and oven cook.

No cream (have gall stones)

Do have wholegrain mustard....both sauce and mash with that sounds scrummy.

Suzy....do you just bung it all together? Will it work without the cream?

I am probably too late but you could make walnut and blue cheese butter, by mashing softish butter with smashed up walnut pieces and chunks of blue cheese. Spoon onto some clingfilm, roll into a sausage, and chill (or freeze). Then fry the chop and put a slice of chilled butter on top. Serve with mash and spinach.

Finely slice and brown onions and apples, and put these in the roasting dish as a base for the pork chops.

If you've got any packet stuffing, make up a couple of balls and sit them on top of the chips. Roast in a medium oven for about half an hour - depending on the size and weight of the chops.

Or my mil does something similar, but with roasted veg, and tops the chops with garlic breadcrumbs and cheddar.

Throw pork chops in oven proof flat bottomed dish, chuck in one sliced onion and some chopped garlic, chopped carrots, chopped mushrooms and one stock cube crumbled and a big handful of dried prunes. Throw over a pint of boiling water. Cover the top with sliced potatoes (like a lancs hotpot) cover with foil and put in a medium oven for 50 mins or so. Ten minutes before you want to eat peel back the foil and turn up the oven to brown the top. Put green veg (your broc?) on the hob and there you are.

If you don't have any prunes core and chunk a couple of apples.
