Starter help and sauce with beef wellington?????

Hi
Im going to be hosting a new years day lunch. Im after ideas for a simple starter that i can prepare in advance- doesnt take long to cook. ANy ideas?
Im going to be serving beef wellington with seasonal baby vegetables and sauteed new potatoes with thyme and garlic. Do you think i should do some sort of sauce ( ive not cooked it before, have eaten it and have a vague memory of some sort of mushroom sauce?)
followed by a lemon posset. So the starter needs to be in the same sort of style as these and cant be seafood as ive got people coming who wont eat that.

any help greatfully recieved

Stuffed peppers.
Soup.
Nachos.
I would just do a rich beef gravy, but that's just me.

I would go for an oxtail soup to leave room for the main course. and yes I would serve a gravy style sauce (jus springs to mind)
