Chocolate Truffles opinions please?

I'm making chocolate truffles again this year as Christmas presents, and have a couple of relatives who love ginger chocolate. The recipe is as follows. Do you think they would be ok made with the Green and Blacks Ginger chocolate? I'm not convinced.

450g fine chocolate
275ml whipping cream

Also, have some nice small boxes for presentation, but anybody know of where you can get hold of the small transparent bags you can tie up with curling ribbon for smaller gifts?

You can get the bags from Lakeland.

How about putting in some finely chopped stem ginger?

Thanks BBN. Don't have a lakeland near me so will have a look online. Stem ginger good idea, I have some of that, but in a truffle?

Or how about using a tiny bit of the syrup then from the jar?

Hmm. Would be paranoid about making it curdle. Will have a look for some recipes and see if any include a syrup of some sort. Thank you for your suggestions. Just found a seller on ebay that sells those bags with postage of 99p rather than £4 of Lakeland. I just needed to know what to call them.

problem solved. Found loads of recipes for ginger truffles, so going to use my recipe with proportionately the same amount of stem ginger in.

Tryed a couple of the net and then did hers and they were def far better IMO

I would prefer them with ginger tbh.

I made some truffles a couple of months ago and I found them very rich tbh (too creamy and buttery)

(but that could be my lack of cooking skills)

Jenn having it as a favourite is dangerous! I have spent loads on there buying chocolate moulds and cookie cutters. Infact having linked it for this thread I have just bought a load of cookie cutters for ds's birthday party in 2 weeks time!

I agree that delia's are fab. This and thisare the recipes I use every year to make gift boxes for family (that site sells gold chocolate boxes btw), and it has a recipe with ginger.

Not very long as they are made with fresh cream - i made them right at the last minute and wrote on the tag to keep in the fridge as contained creame.

7 days approx

But the sugar and fat content would be a preservative in itself surely? The cream won't sour because it's cooked.

It's called wrappings and bows mashed banana. She said she couldn't say they were suitable for food use because they aren't sold to her for that purpose, but the supplier do supply to the catering trade.
