Food to cook with toddler

DD is 2.5 and enjoys most food and eats well at home and nursery. I work 4 days a week, dh works fulltime, and we both do long hours, so she is is nursey 7 30am - 5 45, 4 days a week. She has dinner when she gets home, but usually eats on her own and then we eat later. We eat breakfast and lunch together 3 days a week.

I am keen to start eating our dinner together on a few occasions a week so we encourage good table manners and can have a chat, and she sees us enjoying our food. I thought she would like even more if we made something together....BUT, I will be very pushed for time, so need some ideas for things we could cook together that will take no more than 20 minutes.

Ideas please!

Pasta, sauce with veg & cheese

pizza - pre-made or prebought base.
Sauce
She can help grate/slice cheese (or you can do it).
Prepare pots of toppings and get her to add them.

dd is 2.7. she basically chops a mushroom (with her own vey blunt knife) while i get on with whatever, shepherd's pie/fish pie/pasta sauce etc. she's also quite good at hacking away at a courgette.

other than that the things she can actually help with are pizza. we get ready made bases and she can spread tomato sauce on, sprinkle cheese, add topping bits.

Filo pastry (frozen)

layer with whatever you like (pesto, tomatoe and ricotta e.g) fold over and bake.

Serve with thick greek yoghurt to dip it in and a salad.

Couscous - takes a few minutes to make, and stir-fry some onions, veg (such as mushrooms, peppers, courgettes, broccoli, carrots) and optionally some meat, and stir that in. The toddler gets to do some easy chopping and can fluff up the couscous with a fork when it's ready.

frittata is great - save some boiled potatoes from earlier meal, they can smash the eggs, add some smoked mackeral to it as well, plus peas (go everywhere but I look on it as an opportunity to introduce my elder son to the concept of puns (escap-peas ha ha)). We have salad and bread with it.

We got a great cotton apron and melamine bowl each for them from here.

I'm not even allowed to prepare humus my self any more we just stand them on chairs at the worktop and they pile everything in and blitz it then eat most of it stright away.

We had a good time making flat breads as well , you just need to remember to activate the yeast before hand so they are not waiting around, but its a good alterntive to baking cakes and the neading is good fun....
