What's the best way of defrosting and reheating rice dishes for babies?

Have made a chicken rice dish from Anabel Karmel book which says it's suitable for freezing. But how should I defrost it and reheat it? Leave it out overnight to defrost on the kitchen counter? Or in the fridge (but it doesn't defrost properly - is still frozen when it comes to cooking it), or what? Help, have just thrown away a pot that I left out on counter overnight as I was worried I'd poison 1 year old DS!

Mmmm, on a food hygeine course I was told never to freeze rice as its the commenest way of getting food poisoning. Not sure how true that is.

But chicken should always be defrosted in a fridge, maybe you need to take it out the freezer earlier?

I thought reheating rice was a real no-no, so have never done it. Sorry to be so little help...

I know AK has nutritionists on her team, but after I got food poisoning at a noodle bar a doctor friend told me that reheated rice - or even rice kept warm for a long time - was a real risk.

So I wouldn't do it at all but if I did (if you get my drift) I'd defrost in the fridge and then zap it in the microwave until it was very hot. It has to get above tepid to zap any bugs.

you can reheat rice as long as prior to freezing it was not left at room temperature for any length of time. I would either defrost overnight in the fridge or use the defrost function on the microwave if you havent taken it out soon enough (if you've got a microwave that is). From the food standards agency:

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem ? it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's piping hot all the way through, and avoid reheating more than once.
