I may have the name wrong, but you know - the one steeped in brine and all sorts of lovely spices and so on. I am ridiculously excited about cooking it - will it really be juice and not dry out?!

brine? Yuck!

I know, I know, but Nigella says to let go of all your preconceptions and it turns out to be a fantastically juicy, Xmas-spiced turkey that I need to eat. It really does sound fab - cinnamon and maple syrup and cardamom and star anise and.... [drools]

I've not but I will be this year, or a version of at least. I may even make gingerbread stuffing! I hope you have got her new series starting this week bookmarked??

Tinkjon · 08/12/2008 11:13

Ooooh, no, I didn't know about a new series! Excellent, thanks for the tip!

I did that last year, worked a treat. The turkey was very moist and everyone raved about it. I was sick as a dog so couldn't eat it but I will do it again. It was very easy, you just need a big enough container.

I know you posted this years ago but just wondered if you could tell me what size of bucket you used to do this, she says a 6 litre brine so wondering if a 15 litre lidded bucket will be big enough? Won't get my turkey till Christmas eve and just can't envisage the size of the damn thing!

Thanks.

We did it a few years ago and will be doing again this year, it was lurvely.

I think a 15 litre bucket would work - reminds me, must add 'bucket' to the list of stuff we need
