I have just made cheese for the first time

It was very simple just whole milk and lemon..........but I still feel all domestic goddess like

Rolling boil two litres of whole milk, stirring to make sure it doesn't stick.

Take off boil and slowly add 4-6 tablespoons lemon juice. Push with a wooden spoon in one direction through the milk. Curds form on top.

Leave to cool/set for two hours - strain through a muslin. Eat over next 3-4 days.

Tis just a soft philadelphia like cheese.

I'm waiting for it to cool/set now.

I have 3 recipes to 'conquer' this week. Simple cheese, simple veg curry, poshtastic cupcakes.

I get a bit worried before I start so I played on mumsnet all morning before I plucked up the courage to start.

Cupcakes next with recipe from Magnolia bakery.

oh my mum used to make cheese -she hung it in muslin over a bowl (she used to make yogurt too in the airing cupboard and ginger beer)

Ok, so cheese is now in fridge - very surprisingly got lots out of that two litres - perhaps 3 philadelphia tubs worth.

Tastes like a ricotta crossed with cottage and philadelphia - very clean tasting and very yummy.

Rally pleased with this today.

I make cheese regularly, I love it and it is easy. I use goats milk, salt and vegetarian rennet and when it is drained I sometimes mix it with herbs or roll it in cracked pepper. It is a great addition to a cheese board if you are having a dinner party

And btw, what you have essentially done is to make paneer. If you drain it more and press it, it should go quite firm and is fab added to a curry
