Baked spuds,, halved, scooped, interesting stuff mixed in and replaced, grilled
Dauphinoise spuds (I like as main course, although I know it's a side dish really!)
sausages and mash??
home cooked oven baked chunky chips with lots of different dips

This Nigel Slater mackerel and potato dauphinoise is lovely. My mum makes it with creme fraiche which makes it a bit lighter. Both ways are delicious.

potato, aubergine and chickpea curry is a firm favourite here.

I make potato and spinach curry, you can use frozen spinach.

Also do a sort of potato cake thing with grated potato mixed with egg, garlic and parsley. Fry until cooked and golden, eat with salad.

I make gnocchi with left over mash (often add spinach here too).

Potato oven bake, chop pots into smallish bits add aubergine, chorizo, tomatoes, courgettes, whatever you fancy. Splash on plenty of olive oil, some thyme, season.
bake in hottish oven.

Can you tell I like potatoes?

Jamie's potato and chorizo omelette looks ok (haven't tried it though)

I have a recipe called gratin de pomme de terre Lyonnaise (creamy potato and onion gratin basically) which is very nice anc can be served with sausages, chops etc

Tartiflette. Lovely french dish from the Alps. Mmmmm. Reminds me of being a chalet girl. Just googled it and there is loads of recipes for it on t'internet.
Have decided to make it tomorrow night now.

Ohhh Jannsens... numnumnum.

Dauphinoise with bacon and onion and a large green salad.

Tamasin Day Lewis had a recipe called Poor Mans Potatoes in Good Tempered food -

Baby salad potatoes, in a tray of olive oil to about 2cm deep with garlic cloves, chopped peppers, and a punnet of cherry toms thrown 20 mins before the end - drain off the oil into a bottle for delish future salad dressings/ciabatta dips, and eat with crusty bread, much wine, and in our house, some melty baked camembert.

Well worth a go.

Will go check the recipe quickly to see if I've forgotten anything

I make a mash of sweet potato, potato, cheese, leeks and red onions.

The gnocchi Beachcomber suggests are also very quick and easy to make. Sweet potato can be substituted for regular potato for extra vitamins.
