Have proper oven for 1st time in 20 years - what are your top 5 favourite recipes?

Need some inspiration and especially ideas for main course and puddings that can be cooked together as it seems so extravagant just to put one thing in!

Sorry to be dullsville but the first thing'd cook would be really gorgeous roast chicken with carrots, parsnips, sweet pots. DP recently bought some pork belly which I'd always thought sounded bleurgh but was fantastic. You need a butcher to trim off the excess fat then roll and tie it properly. It's not expensive and is delicious. We cooked it with thyme, very slowly on a really low heat for 1.5 hours then whack it up high for the last 15 mins to crisp the outside. Green veg like broccoli, asparagus, courgettes turn out really nicely.
You'll be so stuffed you won't need a pudding - but maybe baked bananas, baked apples?
Oh yes and fish! Here is a great Jamie Oliver receipe: cod, drizzle with olive oil, put basil leaves on top, smallish chunks of mozarella on top again, chuck some grated parmesan over, bit more oil, season, cherry tomatoes in the same dish, medium oven for 15-20 mins. Whole bream (for a treat) or salmon steaks in foil with lemon, oil, a little butter.
Another one I like is chicken with couscous: chicken breasts - brown first in pan for a couple of minutes. 2 cups couscous in oven dish, pour over a pint of chicken stock, tbsp oil, season. Put chicken on top. Combine tbsp lemon zest, some chopped parsley, chopped capers and sprinkle over chicken. Throw in some black olives, cover with foil, bake 20 mins at 200.

Oh and fishpie - gotta have that on the list! I use the Delia receipe but add cherry tomatoes otherwise it's too rich.
If you've not had a proper oven for ages, don't forget to let the meat relax for 10 mins (cover with foil to keep warm) before servings, makes a massive difference.

The day after a chicken, I make stock and have this: add some carrots and some onions to the stock, a little finely chopped garlic, chopped ginger, little bit of red chilli chopped, 2 tins green lentils. Before serving add some soy sauce, rice vinegar to taste and put some coriander leaves on top.

Baked aubergines with tomatoes: cut aubergines into 1cm rounds and fry till golden brown, drain on kitchen paper; 2 or 3 cloves of garlic, chopped and gently fried, add 2 tins chopped tomatoes and reduce a bit. Largeish tub of creme fraiche, heat up till bubbling, take off heat and add: 2 chopped tbsps each of tarragon, thyme, parsley, 1 tbsp chives. (I had none of these so just put in some basil and it turned out fine )and add a handful of grated parmesan. Grease an oven dish: do a layer of aubergine, layer of toms, sprinkle of parmesan till you get to the end then pour the creme fraiche over the top and bake at 180 for about 20-25mins.

lastly a great easy pudding! Little apple tarts: puff pastry rolled v thin and cut into individual tart size. Slice apple segments as thin as poss and arrange over the top. Brush with melted butter and sprinkle with sugar. bake.
