ok, I've just peeled and cored 7.5 lb of cooking apples...

...god, what a bore that was! Courtesy of the neighbours, and it seemed a waste not to keep them. They're in the freezer now.

What on earth can I do with them aside from making apple crumble (I prefer eating apples in crumble, anyway)? They're pretty sharp, though not as acid as Brambleys.

I make spiced apple chutney which is (though I say so myself) rather fab...

I mix apple sauce in with breadcrumbs, onions and herbs for stuffing chicken or turkey. This reduces the amount of butter you need to use, is healthier and also makes a tastier stuffing IMHO....

Strange you should ask, my fingertips do feel rather ... etched! And I kept on skidding with the knife, so I suppose I should be grateful that I still have fingertips ...

Apple chunks in flapjacks is a great idea, I'm all in favour of non-boring flapjacks. Think I read something on here about Nigella's christmas apple chutney, so I'll look that up.

It reminds me when I was working as a trainee commis chef and spent 10 hours a day prepping fruit, I had no fingerprints at all. I should have gone out and robbed a bank

Oh boy, I did this a couple of years ago courtesy of a friend with about 10 trees! Took us about a year to get to the end of them. Can't remember what else I did with them except the obvious crumble. If I remember, I'll let you know. Meanwhile, these were the two hot favourites:

Apple snow - it's utterly yummy.

I just made a load of apple fairy cakes - made up normal victoria sponge and added apple chunks. Came out very moist and moreish.

Apple ketchup is totally fab especially with pork ketchup.
Apple scones are lovely (grated apple in place of the liquid)
'Apple in a veil' a layer of white fresh breadcrumbs fried in butter mixed with some sugar, layer of sweetened apple puree, another layer of fried sweetened breadcrumbs, finish off in the oven - unhealthy but good

Dutch friend says that in holland they eat unsweetened apple puree with just about anything the way we would have chutney or pickle

I want to make Apple in a Veil right now - mmmm.

I'd use them in chunks if I were making a christmas cake, but nobody apart from me eats the stuff and I usually end up throwing a lot away in July...

We had a huge glut of apples this year too!, I have been using them up in pork and apple casserole. Just stick some browned pork steaks in a shallow dish along with onion, stock and a bit of sage, add the apples and bake, covered, for as long as it takes you to do the school run, (it takes me one hour and twenty mins!). You might need to thicken the sauce a bit, and I sometimes add cider, the kids don't mind.

Also spiced apple muffins are popular at breakfast and make the house smell nice for the whole day.

I have even resorted to sending in 'tupperware' boxes of stewed apple in the kids lunch boxes and they always eat it, bless them, their friends call it baby food!
