blueberry muffins and basic fairy cake recipe, anyone give me a hand with either of those?

As I've been volunteered to do the baking for a family get together but don't want to do anything too fancy or faffy, just simple stuff I know will be eaten.

Also, are frozen blueberries ok to use?

Not sure about the muffins sorry!

Basic sponge mix, makes 6 fairy cakes, or one small sponge (so just multiply accordingly):

50g marg
50g caster sugar
50g self raising flour
1 egg

cream marg and sugar together, add flour, then egg.

although tbh you can bung it all in and end up with the same thing, just takes a bit longer.

Yes, basic fairy cakes it just equal weight of self raising flour, caster sugar and butter/marg with an egg chucked in. We do the "mix all dry ingredients together, cream the butter in, then add the egg" version.

good luck! About 20 mins at 200 degs, possible 180.

Blueberry muffins (12 large):

180g flour self raising or add 2 tea spoon baking powder to plain
60g sugar
2 eggs
55g butter melted
175ml milk
1 tsp vanilla essence
grated lemon rind of about half a lemon
170g fresh blueberries

cook at 200 for 20-25mins until golden brown.

Sieve dry ingredients, make a well add ready mixed wet ingredients (excluding blueberries) Mix with a big spoon until just mixed not until its all perfectly smooth.

Fold in the blueberries.

Spoon into cases - 1/2 to 2/3rds full.

Most frozen fruit packages seam to say defrost thoroughly before use. If they're in a sealed tub you can fast defrost by submerging the tub in hot water.

I do the 4, 4, 4 and 2 version for fairy cakes i.e 4oz each of butter, sugar, flour, and 2 eggs. Beat together sugar and butter until soft and fluffy with a wooden spoon or a mixer, then beat in the eggs with a tablespoon of flour (out of the 4oz) to stop the mixture curdling then gently fold in the rest of the flour. Makes a tray of about 12 using muffin cases depending how generous you are with the mixture. A few drops of vanilla essence is nice too - I like the M&S organic one but any will do.
