MIL coming to stay this weekend-Ideas /recipes for meals please

My MIL is coming to stay on saturday and going home on tuesday morning.

She is a great cook and used to holding dinner parties and cooks quite simple meals but well.

She does'nt eat what I would call mid week meals like we do .such as cottage pie,chilli,etc.

More vegetables jazzed up ,good quality meat and fish,casseroles and nice cheeses and biscuits.

Was thinking of doing a roast chicken dinner but wondered if anyone had any recipes to jazz up veg please.
Was thinking of using fennel ,green or runner beans,carrots,etc.

Also any potato recipes would be appreiciated.

Also a goulash maybe and a vegetarian dish would be great.

Hi

I have made a great goulash recipe from Jamies latest book it is fab cooks for hours and uses a whole joint of pork that cooks down to the most amazing suculent goulash ! also nigellas 24 hour pork thing is fab ! Fish pie is always a good one and can be poshed up with prawns etc ! on the potato front can't remember its correct name but the ones cooked with milk / cream in the oven are always to good bet !

Thanks ,may nip out and get Jamie's latest book as was thinking of buying that anyway.

Potatoes sound good ,can put everything in one dish and serve.

Fish pie may be an idea although my children may not it.

Thing I have a copy of Nigellas how to eat somewhere will look in there for inspiration.

It is the one about cooking your own veg etc ! not the ministry of food one !
I love nigella and always seem to find something in there ! the puds are quite quick too !

potato dauphinoise is lovely, or potatoes boulangere - its a delia thing but basically thin sliced pots with onions (I use leeks instead as not v keen on onions) cooked in stock.

Would go well with plainish meat like lamb chops or braising steak.
