I have bought a Wilton cake pan and it says I can use any 2 layer cake recipe. I am baking novice and naively promised DS I will have a cake for his b'day. Can anyone help me with a suitable recipe please? I have googled and am left confused with various american recipes and suitability of cakes for icing, etc.. Please!!!

I think it means you can use a victoria sponge/sandwich recipe.

for my 8inch tin
125 butter
125 stork
250 sugar
4 eggs
dash of vanilla essence
250 flour
4 tablespoons milk

make sure tins are well greased
for my oven I cook them for 25 minutes at 160 but my oven cooks quite hot.

cream butter/stork and sugar together add eggs one by one adding a tablespoon of the 250 flour with each egg
add the vanilla essence
then add the flour bit by bit. mix in the milk tablespoon at a time until the mixture drops of the whisk easily.

try to leave a little dip in centre of the mix in the tin I find it helps make the cake flat rather than domed

I USE THE 80z of flour /caster sugar/butter and 4 eggs recipe for 2 layers!

Thanks again, ladies. Sorry it took so long to write back, but I didn't bake until last night :-( In any case, the cake came out beautifully. The cake could do with a bit of thickness, in terms of depth. Just out of curiosity, how would I increase the proportions? - not a simple matter of make double the quantity, fill the cake tin as required and use the rest for cupcakes, is it? Thanks very much.
