Peppermint creams

Maybe a stupid q's but how do i make them?

Looking for something quick to make with the kids

250g icing sugar
egg white from smallish egg
1 tsp peppermint essence
2 tsp lemon juice
Food dye if you want
Cutters
Rolling pin
plate or baking tray covered in clingfilm

Sift icing sugar and make a dip in the middle.

Mix egg white, peppermint and lemon juice then pour into sugar.

Stir with blunt knife then knead (if it's too sticky or gloopy add more icing sugar)

Knead in food colour if desired

Sprinkle icing sugar on worktop and rolling pin

Roll out to little finger thinkness, cut out shapes

Place on baking sheet and leave to harden for an hour

Makes about 40-50 depending on size.

What a timely thread! And the chocolate truffle one.

Can the peppermint creams be dipped in chocolate after they've hardened, or should this be done sooner?

When I make them, I split the mixture in half and add a very small amount of green colouring to one (so it is just pale green)and leave the other white.

Then I roll into small balls and then take a fork, dipped in cold water, and slightly press down so that they flatten slightly and have ridges on one side.

Then, once they have firmed up, I melt some dark choc and half coat each one.

They go down well on baking stalls etc.

NB remember these have raw egg in - not everyone goes a bundle on it

we used to cheat and jsut flavour ready-to-roll icing with peppermint essence

You cann get dried egg albumen in supermarkets (home baking section) if you're worried about using proper egg. You reconsitute it with water but it's 'safe' (pateurised?).

You can also buy cartons of pasteurised egg whites from the refrigerated section at the supermarket.

I'm happy to use fresh eggs for ourselves, but if it is for other people, I would use the pasteurised ones, although I am sure that eggs are safe nowadays.
