I have a couple of favourite dishes that I usually march out at xmas time but would like something that is actually xmassy like a lentil roast or similar, just never found a nice one. Ideas please

I think I'm going to make a chickpea and roasted vegetable thing from the Vegetarian Christmas magazine; or some sort of root vegetable streudel thing. Usually we have a quorn roast, or stuffed mushrooms, with all of the usual trimmings and I've also been known to have all of the trimmings and not bother with a replacement for the meat.

i jusr have all the trimmings, veggie style. not bothered about a 'meat' replacement! The rest of it is delicious on it's own!

I'm not cooking this year, but this vegetarian bourguignon pie would have been my Christmas lunch.

this also looks yummy but I haven't cooked it

I still haven't made my mind up. Current thinking involves a huge pan of roasted vege, sprouts, honeyed carrots, savoy cabbage, stuffing balls and - something.

We're going with the Quorn roast.

A bit boring but a) the kids will actually eat it - they are going through a vegetable-loathing phase so wouldn't touch anything like those delicious looking chestnut puds & b) I have carvivorous MIL, SIL & DNephew, BIL & other SIL to cater for, so I've already got a joint of beef to do...need something that is idiot-proof!

we just do a big tray of roasted veg, glazed carrots, mash and roasties, plus cheese sauce and yorkshire puds.

This year I am doing cheese fondue because we'll be ski-ing!!! YAY!!!!

However, normally would do a chestnut, onion, nut and mushroom thing (aka vegetarian turkey) wrapped in puff pastry decorated with holly leaf pastry shapes (for that festive touch don't ya know) accompanied by the usual roast veggies and bread sauce. Will probably do that on NY eve when we are back home.

roast the cashew nuts for about five mins in a medium oven then bash them with the end of a rolling pin.

In a bowl put 3 fried onions or shallots, lemon juice, lemon zest, brown breadcrumbs, a crumbled stock cube and add the nuts. stir well then bind it all with 2 or 3 beaten eggs.
Shape it into a turkey shape with two 'drumstick' legs.
Shape an area for the stuffing.

stuffing - chestnut and cranberry paxo. Follow instructions then stuff it into the hind quarters of 'turkey'

Bake in a 180 oven for about 20 mins then cover it with a little tinfoil and bake for about 10 more minutes. It is lovely with cranberry sauce or cold the next day.

I never weigh out anything but use a 500g bag of unsalted cashews and 1/4 loaf of bread.

We've had mushroom and chestnut wellingtons for the last don't know how many years, it's so yummy we don't want to try anything else! Recipe is from a v old Somerfield magazine.

Serves 6
Ingredients:
1 onion
1 clove garlic
15g (1/2oz) butter
350g (12oz) mushrooms
12 chestnuts
2.5ml (1/2 tsp) dried thyme
15ml (1 tsbsp) plain flour
60ml (4tbsp) dry sherry
60ml (4tbsp) double cream (we've been using coconut cream since my sis turned vegan and is yum)
1x 500g pack puff pastry
1 egg

  1. Preheat oven to 200c 400f, gas mark 6. Pierce the chestnuts and boil for 15 minutes. Allow to cool and peel, half and reserve.
  1. Finely chop the onion, crush the garlic. Melt the butter in a frying pan and gently fry the onion and garlic until softened. Slice the mushrooms finely and add; cover and cook for a few minutes until softened.

3.Stir in the flour, dried thyme and chestnuts, cook for a minute. Add the sherry and cream - allow to cool.

  1. Roll out the pastry thinly and cut into 4 x 20cm squares. Brush each edge with beaten egg. Divide the mushroom mix between the four squares and press together the pastry edges, sealing well. Brush with egg and cook for 20 - 25 mins until risen and golden.

That's what the recipe says, we make smaller wellingtons and make them before xmas day, then just bake them on the day.

I'm going to have chestnut, leek, apple and stilton crumble from Leith's Vegetarian Bible. Very yummy. The kids will eat it and the meat eaters will probably have some too as it will go with the turkey.

My problem is that dd1 doesn't like: cheese, eggs, mushrooms, leeks, chestnuts, cranberries - and most Christmas veggie recipes have some sort of combination of these ingredients in them!
