Foolproof chocolate mousse/tiramisu/nice dessert recipe needed please!!

Hi

it is DHs birthday on wednesday and I want to make a nice meal including dessert. Problem is making desserts scares me ( i am a 'chuck it all in and hope for the best type of cook which doesnt sit well with the precision needed for most desserts!)

I was hoping to make some kind of chocolate mousse, preferably with baileys, or a tiramisu type thing. The recipe needs to be REALLY easy and either made the night before, or can be made in an hour on the day itself.

I have seen some chocolate mousse recipes online BUT they all either ask for marscapone (hard to get near me) or the pictures dont make it look 'moussey' enough if you know what I mean.

Can you tell Im fussy?!

Please could I have your foolproof dessert recipes????

ummmmm I'm rubbish at chocolate mousse, but we do a lovely dessert that marks and Spencer used to do years ago and stopped - so we copied them! Doesn't sound to good but tastes and looks divine.
Individual pudding dishes - bottom layer of tinned rice pudding (cold) than sliced tinned pears then choc angel delight. Then decorate with whipped cream and crumbled flake. Pop in te fridge to chiil through and serve.
Trust me - it's divine - you should try it!

chocolate mousse:

melt 250g good chocolate (I use half dark half milk)
leave till cool but not set
whip 250ml double cream
fold choc into cream
chill

variations:
add booze
add coffee
add orange zest
spoon into individual dishes / glasses before chilling
pour into clingfilm-lined cake tin before chilling, turn out very very carefully, peel off film, dust with cocoa or icing sugar

Why not try Gordon Ramseys Tiramasu he made on the live cook along. It was incredibly simple. You can google it. I am planning on making it at Christmas, he made it in individual glasses.

SoupDragon's Pot au chocolate

1 tub mascapone cheese
1 bar plain chocolate
Melt them together in a saucepan and pour into little ramekin dishes and allow to set (of eat, still warm, from the pan with the stirring spoon. Your choice )

Chocolate Cheesecake !

Usual digestive biscuit & melted butter base.

2 tubs of soft philly type cheese (we use Tesco's own brand).

Get 3 bowls - 2/3 of tub of cheese, mixed with melted bar of chocolate (one dairy milk, one plain, one white - therefore using both tubs of cheese entirely) and 4 tablespoons cream into each bowl and mix up.

Splodge of each mix onto biscuit base until tin all filled and stir with a skewer to give a marbled effect.

Yumtastic !!

I tub of mascapone cheese
I tub of equal amont ready made custard

beat them together

place sponge fingers in bowl and puor over coffee and tia maria or another liquor about a three quarter cup full then put the custard and chees over the top and then a layer of whipped cream and chocoalte sprinkles

The recipy is on the inside of the lid of the cheese so take a look in the supermrket (the tub os seeled)

Mrs Badger your choc mousee recipe sounds like just the thing! I would like to add some alcohol to it, silly question but how much should I add? too much and presumably the mousse will be all runny?

I lurve bannofee pie but this is one of my regular desserts (in that I have 3 which i have shamelessly rotated for any event over the last 3 years)so fancied a change

Buy brandy cream instead of ordinary cream As it's Christmas time, supermarkets will probably have it in.

depends how generous your helpings are

if you do it in teeny wineglasses, or turn it out and cut slices, you will get more than serving it from a big dish with a spoon

and yes, a tablespoon of booze is enough

I am the same on dessert - not my forte! I made this (from mumsnet, obviously! ) and it was a) delicious b) easy c) looked good!

Tequila, Chilli and Chocolate Mousse

Serves 4

Ingredients
50g unsalted butter
1 tbsp mild chillies
150g/51/2 oz good quality dark chocolate
2-3 tbsp 100% Green agave tequila, add enough to taste
3 free-range eggs, separated
3 tbsp caster sugar
200ml Jersey cream

Method:

  1. Melt the butter with the chillies and leave in a warm place to infuses for at lest half an hour. Then pass through a sieve.
  1. Place the chocolate in a large Pyrex bowl over a pan of gently simmering water. Allow it to melt before slowly add the butter and then the tequila. Remove from the heat and then fold the egg yokes one by one.
  1. Whisk the egg whites until they form soft peaks, then add the sugar and whisk until the mixture is really glossy. Fold really carefully into the chocolate mixture to retain as much air as possible.
  1. Spoon into four tall glasses and place in the fridge to set for at least two hours.
  1. Just before serving very loosely whip the cream and top each mousse a quarter of it, serve immediately.

These are fab. here Very easy and can be made in advance. I used the greek yogurt as I didnt fancy the raw egg and it was yuuuuuuuuuumy!

Janmoomoo, that recipe looks very appealing especially as it looks simple! can i ask though, if you used the yoghurt, did it still give a moussey effect? or was it more like a chcoolate dessert type angel delight type consistency? Ideally i want it to be 'moussey'
