I have never made one before but thought that it would be a nice wholesome, warm meal to have as the nights are getting colder. Anyone know one that is fool proof?

pre heat oven to gas mark 7.
-chop up some casserole beef or lamb put at bottom of casserole dish seaon with salt and pepper
-chop up 1 onion and a few carrots, 1 sweet potato diced small add on top of meat.
-add peeled and quartered potatoes so that it covers top.
-boil kettle and make up a weak gravy (I use bisto!) pour into dish untill half way up the potatoes.
-put lid on and pop in oven for 20minutes or untill boiling turn oven down to gas mark 4 for 2hours.

this recipe is easy and tastes yummy.

This is our regular weekly veg casserole recipe:

Chop some onions/leeks, garlic, celery and carrot, fry in some olive oil or butter.

Brown them slightly then add a cup of pearl barley, mixed herbs, tomato puree and any other veg you have, eg swede, sweet potato, parsnip possibly even aubergine. I always add potatoes as well.

Cook for a few minutes then add some veg stock (with a spoonful of marmite and brown miso paste) and a tin of baked beans.

Put in oven, covered for about 30 minutes, I usually add some dumplings, taking the lid off for the last 5-10 minutes.

I usually brown off stewing steak in a bit of oil and then put in the bottom of a casserole dish. Add as many root veg as I can and pour over a can of Guiness. Add a stock cube and a slug of Worcestershire sauce and bung it in the oven at about Gas mark 3 for 3 or 4 hours.

Fry an onion, garlic and lamb.
Add tin of tomatoes, dolop of honey, cumin, chilli, grnd corriander and cinnomon. Season to taste.

add stock (reduce the salt if you are using a cube) to cover the meat, shove in an low oven for a long time and eat it when you are hungry.

We serve it with cous cous, so it is perfect if you are going out in teh afternoon and getting back at tea time.

This is Jamie Oliver's Beef in ale, I tried it the other day because I make a Beef in Ale and wanted to know what his was like. It was very good.

500g Beef
500ml Stout or guiness
2 Medium Onions
2 sticks of celery
2 carrots
2 bay leaves
400g tin of tomatoes
tablespoon of flour
two bay leaves

Put Bayleaves, carrots, celery and onion in casserole dish with a couple of slugs of olive oil, fry for 10 mins, add meat and brown off, add flour and stir in, add ale and toms and cook in oven at 180/190 for 3 hours. jamie says 200 degrees but it would cook away at that temp IMO
