Home-made chicken nuggets?

I have some leftover roast chicken. Can I make homemade chicken nuggets out of it and if so how? DS (14 months) can't cope with roast chicken as it is - too chewy - but I thought I could whizz it in the blender and mix it with something mushy somehow? Thanks in advance!

Cut into chunks, dunk in whisked egg, drop into a sandwich bag with flour, herbs, seasoning, seal the bag and shake well. Cook until golden in hot oil. Drain well and eat.

Or breadcrumbs.

Goober, can you freeze them after the dunking in the bag of breadcrumbs stage or do you cook them first?

If you want to make it mushier, you could whizz it in the food processor with an egg and some breadcrumbs, then shapr it into nuggets and coat it with something - crushed cornflakes are particularly tasty!

If you add cheese into the breadcrumbs, it's even tastier.

If it's already cooked, I don't think it will be all that easy to chew. Maybe go down the rissole route instead (whizz up in a blender first)?

Goober, they sound tasty but I specifically wanted to whizz it in the blender somehow so that he can chew it easier. Scootergrrrl, that's exactly the sort of thing I was thinking of - thanks! Snickersnack, what's the rissole route? I don't think I know what a rissole is!

I make beef rissoles with cooked beef and mashed potato - just whizz the beef down in the processor, mix with mashed potato, make into cakes and fry in butter. I don't see why you couldn't do the same with chicken, might be quite tasty if you added a tiny dash of ketchup or something. Certainly wouldn't cause any teeth issues...

I dip mine in red pesto then roll in a mix of parmesan and breadcrumbs before oven baking. yummy

I add grated apple after whizzing - the kids love them as they are a little bit sweet.
