I've just made a really scrummy sausage and bean stew.

What can I do with the leftover beans? I've got half a tin of kidney and half a tin of butter beans. Waste not want not and all that, any ideas? TIA

Blitz them up with a little olive oil, lemom, and garlic and have it as a dip.

I don't think we can possibly suggest anything unless you post the recipe for your scrummy sausage and bean stew (please). (actually, not sure I have any suggestions anyway, but would love to see some ).

Mmm dip could be a good idea, I've just made some cheese straws so they'll be a good accompaniment. Thanks

4 sausages
1 onion, chopped
2 carrots, chopped
1 tin chopped toms
500ml water
1 beef oxo cube
1 vegetable stock cube
dash each of cayenne pepper, chilli powder, black pepper and Worcestershire sauce
half tin butter beans
half tin kidney beans

Brown sausages in pan. Add onions and fry until soft. Put everything in pan together, bring to the boil and simmer until the sauce reduces, which can take around an hour. At this point I added a handful of red lentils as the sauce was a bit thin, but you don't have to. Add beans and simmer for 5 minutes. Add one more dash of Worcestershire sauce and voila!

You could add a bit of garlic if you had it or a bit of bacon. Anything really, it's quite versatile.

looks nice - can't you just keep the beans and make a chilli tomorrow? (although cheese straws and dip sounds nice too!)

Yes I suppose I could save them for a chilli. Maybe I'll make some into a dip and use the rest in the chilli. There's a fair few there.

I make cottage pie with beans, mince, carrot, onion, cougette, tin of tomatoes and herbs. Lovely with loads of cheese on top.

Bean salad? Chuck in some peas for extra colour.

Mix beans/peas together.
Chop an onion very finely and fry gently in a very generous glug of olive oil. Add the zest of a lemon or a lime and some finely chopped red chilli. You could also add some very finely chopped garlic.
Stir in the beans/peas, and stir everything together. Then season with black pepper, salt and any herbs that you like/have to hand.
Squeeze in either lemon/lime juice or some wine vinegar (whichever you prefer), then leave to cool. Stir occasionally to keep the oil/juices well distributed.

btw do you not need to simmer/boil lentils for 30 mins? I thought they had some poisonous thing in that needed cooking for that long.

charchar i have never seived the skins bofore.If you cab blitz it in a food processor it will be so smooth you wont notice the skin.
