Scrambled eggs on toast
Pasta cooked with sweetcorn, then butter and grated cheese on top
Pasta mixed with sweetcorn and tuna mayo

noodles take 3 mins- add stir fry vegetables
quick cook pasta takes 5 mins - add chese chunks, cherry toms, ham, cucumber, anything at all
cheese on toast
beans on toast
omlette with any old things ue mushrooms cheese etc
scrambled egg
stuffed pepper
savoury rice

Stick him in a back carrier. Just don't give him cheese to nibble or he'll rub it in your hair (I speak from experience - my ds spent many hours in the backpack while I cooked). I did once think about writing a recipe book completely compiled of 'recipes you can make using one hand' because I certainly had a list of ones that were good back then.

Pizza! (use scissors to cut up if you only have one hand)

All the above, plus...

  • sardines on toast (try it, even if you don't like the idea yourself - you never know!)
  • frozen fish fingers (with apologies to anyone who disapproves of convenience food)
  • eggy bread (soak bread in egg & fry it)
  • savoury drop scones - 100g sr flour, 1 egg, 4 tbsp milk plus anything else you have around - ham, cheese, peas, grated carrots etc etc, mix it all up & put spoonfuls in a frying pan & fry on each side for a couple of minutes. It's very quick (honest!) & my 16m dd loves them.
  • Cheese on toast is easy & you can add extras - ham/tomato etc, make a sort of pizza.
  • Corn on the cob is quite popular in our house at the moment - also peas, carrot sticks (raw if they've got molars, otherwise cooked), broccoli

Oh yes, also I sometimes do pasta with peas/sweetcorn & then when it's cooked & drained I break an egg into it & stir until it's cooked, then add cheese - this is quite popular too.

Slowcooker is great if still has a mid morning nap. Put a casserole in then and forget about it till need it.

risottos are good too if you can grab just a couple of minutes to chop/fry onion and use wholegrain rice (doesn't need constant stirring). Basic recipe = large onion softened, dump rice in (say 2-3 cups) plus 1-1.5 litres of stock. Then add what you like - ham, tuna, peas, broccoli, sweetcorn, tofu. Lid on, set timer to check on every 15 mins or so, top up with boiling water if necc and ready after about 40-45 mins. Butternut squash reeeeeeally nice in this but is a pain to peel and chop.
