Quick help neded with ganache

I have an important cake to make for a friends 18th. I was thinking of filling nd icing it with ganache instead of my usual chocolate fudge icing but am wondering, if it gets iced today, will it still be ok for tomorrow's party? Thinking about the fresh cream aspect and the chance that it won't be refridgerated befoe the party (will be in a very cold kitchen over night though.

what do you think? Ganache or chocolate fudge?

Ganache. Should be OK in a very cold kitchen overnight.

Ganache would be fine - you don't need to fridge - but the issue then if a bit warm is that it may go a bit soft. I'm sure in a cold kitchen though it would be fine - it should come up to room tempish tough to serve it - tastes better and easier to cut up. Both are nice but ganache wins over IMO .

I am decorating over the top of the icing and I'm a bit worried that the ganache might be a bit runny (if it warms up) and the decoration wll roll off.

The ganache would probably only go soft - unless its in a really warm place - a high cocoa content chocolate will help to keep it firm and a good thick layer should help any decorations to stay put. As SPP says just put the final touches on as late as you can.
