Celariac, what is it? and can I put it in homemade veg soup?

It came in my veg box and smells delish!!

yes you can put it in soup, that is what I usually do with it - Delia's slow cook root veg soup has it in I think. you need to peel it quite thickly

Celeriac is gorgeous in soup. It's also lovely mashed with potato and served with something that involves gravy.

Also nice parboiled with chunks of carrot then stir fried with garlic and bacon or pancetta. Can give some people (moi) very unpleasant wind in a Jerusalem artichoke sort of way

It's gorgeous - slice and layer with potato and onion, add stock and bake. Also makes a lovely coleslaw.

I grate it and mix with carrot & onion & mayo as a coleslaw - add a few sultanas too.

Oh I love Celeriac in my soup. It gives it a thick, velvety texture adn a superb flavour.

I use it in mixed roast veggies and also use the same way as I would when making potatoe wedges (slice into wedges , mix with a little oil and roast... instead of chips or bought wedges)

Agree with coleslaw idea... very french ...remoulade... just need to add abit of wholegrain mustard to the mayo when mixing the grated/finely chopped celariac ( I don't add any other veg if doing a remoulade) For coleslaw ..pile it all in!!!

I love it boiled, mashed with a bit of nutmeg. Very windy afterwards. Also, make a celery and celeriac soup - Delia Smith I think - lovely!!

I found a nice recipe where you cut it into chips, par boil them, then coat them with oil and a tablespoon of curry powder and roast. Not too faffy but very tasty.

How long do the wedges take, daffodill? I have often thought about trying wedges but never got round to it. Is it about the same amount of time as potatoes or a bit less?

Celeriac remoulade is gorgeous.

I made celeriac soup yesterday, with lots of ginger, white wine and cream. It was delicious.

Horton- tends to take 10 mins less than potato wedges assuming you cook at same temp and are of a similar size.
