Does anyone have a nice way of cooking red cabbage?

Rather than boiling it that is, I seem to remember seeing a recipe using apple juice to cook it.

Thought it was vinegar. Poss red wine vinegar, splashed in water. Or oven bake (covered) with a splash of the same.

Made somthing similar to the above recipe for Xmas dinner last year. It was yummy and also reheated very well.
Would go lovely with some lamb chops, or sausages.

thinly slice re cabbage, red onions, chop cooking apples

put in a casserole dish, add a little brown sugar, and a fair slosh of red wine vinegar, cover, bung in oven for about 1 hour, when cabbage is soft it is ready - and delicious.

Yep....I do the same as Jesuswhatnext but also add some cloves and a cinnamon stick. Lovely....then sit back and wait for the wind...

really nice tana ramsay one....can't get off the sofa to get the book so will guess (excuse is 7 1/2 months preg!!!) slice thinly...slosh in some balsalmic vinegar and a dollop of redcurrant jelly (or cranberry) ..maybe a bit of water...cook in a saucepan for ..ooh a while!..until it is ...cooked! Nice with mash! Makes a lovely red sauce but quite tart with the vinegar.

Delia Smith does a good one as well, similar to other posts.

Red cabbage is much much better reheated - I portion it up and freeze it, as it's only me that eats it here.

Thanks everyone, I kind of made it up, somewhere between Delia's recipe and a bit of everyone elses. Was yummy! Does it freeze well then twoluvlykids? I've got loads left over, as ds has got a cold and is super fussy about his food at the moment I don't think I can persuade him to have some.

Also try slicing red cabbage in alternate layers, in a casserole dish, with sliced onion and peeled apple.(in 3 or 6 layers).Then add a tablespoon of demarara sugar and a couple of tablespoons of white wine vinegar. If you've got a juniper berry lying about add that too but don't worry if not.

Cook in oven alongside whatever else is in there until soft but not mushy ( or on its own on gas 3 for 1.5 hours)

Delish! Reheats well too
