Anyone have an easy birthday cake recipe for a one year old?

DS2 turns one on Sunday and I'd like to make him a cake. One with not too much sugar would be ideal and that is easy to make as he's not really had much sugar before. Thanks

After a lot of experimentation over the course of 10 children's birthdays (10 birthdays, I hasten to add, not that I have 10 children!), I've come to the conclusion that a basic Victoria sponge is the simplest / easiest / best received. It's also the recipe recommended by my local cake decorating shop.

It's basically 2oz each of self raising flour, butter and caster sugar to each egg, and for a birthday cake I would normally go with 4 eggs / 8oz of everything, but it totally depends on how big you want it to be.

Not exactly low sugar, but not excessively sugary either, especially if you decorate it in moderation and are sensible about how much of it you let him have in one go!

thanks MHB, I'll give that one a bash. Will 4 eggs/8oz be too much for a small sandwich style cake do you think?

difficult to say without seeing your tins, but maybe go for 3 eggs / 6oz.

just thought as well - you could always fill with cream & fresh fruit which would be a lot less sugary than the jam & buttercream combination we favour at Hardbroom Towers.
