Things to do with lentils...

Just done a stock check and I have 2 sacks of lentils above my cupboards! (2x red split lentils and 1x channa dal)

Aside from lentil curry and lentil bolognaise what can I do with them?!

My mum makes a yummy lentil and cheese slice, you can have it hot one day and the rest cold for lunch the next. I cannot remember the recipe at all though. I think it was a Cranks one, will try and google.

Lentil soup? Spiced rice and lentils (to go with something else, maybe the channa dal for a full Indian meal?!)

Mmm lentil soup sounds good-quite fancy that with tomatoes.

Just soaking some chana dal for yet more dal and rice! I've never thought of cooking lentils as a slice- sounds interesting.

Just had c-section and can't get to shops so cooking with all I can find in the cupboards (also fantastic for the wallet!)

If you eat meat then a lentil and bacon soup is nice?

Rough ingredients:
tomatoes
red split lentils and or green lentils
onions
garlic
smoked bacon
carrots
spinach
celery
lemon juice
thyme
black pepper
English mustard
smoked paprika
bay leaf

I've got the Cranks recipe book here, penona, so here goes:

Lentil & Cheese Wedges
Red lentils - 8oz/225g
Water 3/4 pint/450ml
Large Onion, chopped 1
Butter or marg 1oz/25g
Cheddar Cheese, grated 4oz/100g
Mixed herbs 1tsp
Egg 1
Breadcrumbs 1oz/25g
Salt & pepper to taste

Cook the lentils in the water until soft and all the liquid has been absorbed.

In saucepan, melt the butter and fry the onion until transparent.

Combine all the ingredients, press into an oiled 9"/23cm sandwich tin.

Bake in the oven at 190C/375F/Mark5 for 30 mins.

Serve hot or cold in wedges.

Think I'll have to try this one myself, might even see if DS (14.5mo) will eat it...

Wow, thank you for the recipe!!! I love this meal and have the recipe on a tiny scrap of paper I keep losing.
Children seem to love it, and cos you eat it hot and cold is very handy.
Am going to make some this weekend!

I did some lentil burgers the other week which were lovely and very similar basically to Numpty's Cranks recipe except with a few tablespoons of crushed walnuts.
