Gluten free, dairy free, no potatoes and no pork...any recipes?

My mum is coming to stay this weekend and she has a very restricted diet, she is also trying to lose weight but eats the same meals over and over again as she can't thinkof other things to cook, so please give me your best ideas and I can surprise her! I have 4 days worth of meals to cook, so snacks, baking, full meals, puddings, anything!

My friend cooked for her dh (lactose free) and my dh (gf)

She did chicken and onions, fried together. Then stirred in mushrooms and sweetcorn. She then poured a carton of that soya cream (alpro) over the top. Serve with rice (white or brown).

Risotto?

Omelette (don't add milk obviously, traditional omelette afaik you don't add milk anyway)

Rice pudding with soya milk - do a trial run as I don't know if it "works"

Also browse the free from sections - if poss get to a big Morrisons (cheapest) Sainsburys or Asda.

Be creative with fruit if at all possible. I tried baked bananas with dairy free dark chocolate - not bad. Grilled pineapple with honey. Add some alpro "cream".

If she can have sweet potato try sweet potato wedges, like you would do with "normal" potatoes.

nuts for snacks?

I suppose taking your culinary mindset back to the "meat and two veg" school could help.

So, grilled chops, roasts, steak etc.

Soups? Maybe something like chicken noodle (using rice noodles which I think are gf) Or veg soup.

I've just made a "Spanish chicken casserole", which is basically aubergine, courgette, tomato, pepper, onion and olives plus chicken and some red wine.

Also fish. Easy to do, and yummy.

Ooh, lovely stuff, thanks. Will be easier as well as DH is going away, and he doesn't do veg, which makes it hard to cook for them both!

I always make Thai Curry and rice for my SIL who is allergic toloads of stuff.

Butternut squash risotto is also good.

Meridian do a glutenfree/milkfree White Wine and Mushroom Sauce - we cook white fish in it and it is really nice.

I also cook fish in passata to which I have added a chopped clove of garlic and some basil.

You can bake any of your usual recipes using Dove's Farm Glutenfree Flour (available in most supermarkets) and Pure Sunflower Spread which is dairy free. If using yeast you need to follow a special recipe but for everything else it works really well.

For a light lunch you can add Sharwood rice noodles to any soup about four minutes from the end of the cooking time.

Glutenfree pasta is available in most supermarkets - you could do carbonara using milk free "cheese".

I used a great book called 'Cooking Without' - I think I got it quite quickly when I ordered it at the bookshop.
