so talk me through the butternut squash roasted with the skins on.........

they're cheap at Aldi right now, really fancy the idea them roasted, but need a bit of encouragement. Are they really scrummy with the skins on, it seems so tough?

you don't need to eat the skin, just scoop the flesh out once it's cooked. Much easier than peeling beforehand.

You can do it that way and I did last week.

Think I prefer to peel it though.

Oh yes, so easy, and you don't eat the skin (which goes soft quickly), just scoop out the flesh. SO much easier than peeling - why peel? I always think the knife will slip and I'll end up severing my hand!

I did one last week, and as per Nigella, ate the skin as well..it was nice, like a jacket potato sort of texture....

As the others have said, roast it with the skin on, and then scoop the flesh out once cooked. Delicious.

yep

scoop out the flesh, whizz it with a bit of veg broth,
return broth/squash to a pan,
add more broth and a bit of milk
stir
Serve with giant croutons, a dollop of creme fraiche, and sprinkle with home-made bacon bits, and fresh coriander if you are feeling fancy

just peel like a potato with a peeler

i had it today - peel, chop, bung some oil and S&P over it

bung in oven at 180 for about 45mins

YUMMY

also you can make a nice soup, boil in veg/chicken stock and add a chopped onion and whizz in blender

thanks guys, i do eat it loads with the skin off in various guises, even made some absolutely delish muffins with it in. It's just that I'm pretty sure that folks on here have talked about roasting it and eating with the skins on and I fancied being brave......

Cut in half, scoop out seeds, fill holes with orange juice and then roast, delicious.
