Cooking and reheating rice

I am going to cook a load of rice for a party soon, and I was thinking of cooking it, cooling it quickly and keeping it in the fridge till I was ready to reheat. Do you think I could reheat in the oven in 2 big foil covered pots?

It is really, really dangerous to reheat cooked rice. Just cook it for the party andkeep it in the oven?

I have no idea why this is considered dangerous. I'm forever reheating/reusing rice.

Me too pretty candles. i cook, cool, freeze, defrost and heat up rice and we're all alive to tell the tale.

I am indian and constantly cook plain rice and biryanis and keep for about 3 days in fridge.So do all other indians i know

I do usually, but it will be 2 big pots (too big for micro, so I would have to do it in batches. I don't want to miss the aprty reheating and I think it might be tricky to faff in an overcrowded kitchen!
Hence why I was thinking of just bunging it in the oven!

I have rice just about every day miss indian food otherwise,cook normally for 3 days and keep in fridge.

There is a point with any foods that heating andcooling are dangerous. The problem associated with rice is with takeawys where they heat a certain amount in a wok and what they cannot get in the take out container goes back into the cold stuff, therefore continually comprimising the temperature of the top layer, and constantly re-heating and cooling the top layer.

If I am right the danger zone is 6 degrees to 53 degrees.

Cool the rice down by putting it into a large container and then into a sink full of water and ice, keep stirring to get as cool as poss as quick as poss.

I would again re-heat in the microwave, if you need to do two or more containers then they can be held in the oven, covered with foil until you are ready. I would also add a drop of water to the bottom of the rice to keep moist, but only a little ! Adding some fried onion and peas is nice too

If you are that worried then but a food probe, can get them for about £5.00 on ebay and well worth it knowing your guests are safe !!

Also forget to say if you had the food probe you would make sure all foods were 75 degrees and above to be considered safe !!

Pushprobe aproximately half way into what you are wanting to test to get the most accurate reading.

We got ours in IKEA! Basic but does the job well enough - but doesn't do more than about 6 portions at once. Also saw a similar one in LIDL a couple of weeks ago - but only have stock for a short time.
