What's your favourite easy-to-cook meal?

I'm looking for some inspiration of some really easy, quick meals. Baby due in the next few weeks and I was thinking it could be an idea to have some easy meals in mind for those early weeks. I've got some meals frozen as well, but I figure we'll need to make some meals too. Recommendations?

Making stuff and then freezing is a really good idea, otherwise pasta and any old sauce is about the easiest thing to do! If you are BFing I was told its best to avoid anything too spicy or "windy" like lentils, broccoli, cabbage etc as can upset newborn.

My quickest meal ever ?

One pan of cooked pasta

One tin of mackerel in tomato sauce

Open tin, tip contents into pan

Stir

Serve

Sounds revolting but is surprisingly yummy

Spaghetti Carbonara

Cook pasta

Mix egg, cream, parmesan in a bowl

Bacon bits in frying pan, some garlic if you like

pasta on top

stir in eggy mix

Make sure that it is cooked through, you don't want to get salmonella

Been doing that Jaimie Oliver bacon pasta one about once a week for a while now ! One of those feed your family for a fiver ones.
Just cook pasta, chop up and fry bacon and peppers, courgettes, or anything you've got hanging around really, then stir creme fraiche and grated cheese through the drained pasta. Easy peasy !

My easy pasta dish that we have about once a week. This is the simplest meal I make that I still class as real cooking.
1-2 cloves garlic, slice and fry gently in olive oil.
Add about 2 chopped tomatoes per person (skinned if I can be bothered).
When almost cooked, add 1 'cube' of frozen spinach per person. Or fresh spinach if I have some in.
Then stir in cream cheese just before serving. Basil added if I haven't killed our latest plant.
Garlic and herb boursin can be used to cut out the garlic chopping part.
Serve with pasta (obviously).

I am a total plant killer. DP is in charge of the windowsill now.

I fry chicken with chilli, garlic, ginger, add onion and pepper and serve with noodles and soy sauce.

Pasta & pesto, angel hair paste cooks in 4 mins. I stir in chopped cherry toms & a few pine nuts.

Oven roasted veggies (I use butternut squash, sweet potato, peppers, courgettes and red onion) with herbs and olive oil. Roast until they start to brown, then put sausages in on top for about half an hour. Yummy one-pot meal - and probably all of your 5-a-day on one plate too.

Roast cherry toms and garlic in olive oil gas mark 6 for about 20 mins. Mix with cubed feta when cooked. Put on top of pasta. Add cooked spinach if you wish.

Vegetable biryani,
Mince, veg and dumplings
Veg and dumplings - often whizzed down the next day into soup
Pasta Bake - with mince, veg, tomatoes, cheese and ready salted crisps

Best recommendation for the first week or three is to choose something that can be eaten one handed, and then get hubby to cook it... risotto is great like this.

The rest of the time I recommend those little deli pots of rice / pasta/ salad from M+S... mmmm they are v nice. And can be eaten one handed while sitting on the sofa.

Because newborns always want to BF just as dinner is ready.

Ah yes - I'd forgotten about one-handed eating! DD had food spilled on her so many times as a baby.
