I'm doing an evening course. I'm finding it a bit boring tbh.

So far we've done sardines stuffed with coriander, cumin, garlic etc. Chicken cooked, essentially, in coriander, cumin, garlic etc. Lamb with cumin, coriander, garlic, and a few other bits. Meatballs cooked with....

All seems to be a bit samey. And none of it has been that tasty.

Is it me? I'm finding it a tad unchallenging tbh.

And also, we're not doing any kind of accompaniments, which I kind of thought would make the meal. In the first week we were told meals were always served with several salads, but we haven't done any.

Not inspired. Help!

sounds like a very dire course.

any moroccan cook book will give you more inspiration than that.

the basics

Why don't you ask the teacher, you are paying after all? I am doing a wine evening class and no one but me asks any questions if I was a teacher I would want questions and requests!

Believe me, I ask lots of questions LOL. I just don't get very interesting answers. The lady who runs it is very sweet, and I think she just does what she cooks at home. A bit like me going to Morocco and doing a course on English cookery. You'd get shep pie, roast chicken, cauli cheese etc, but nothing very special with any of them.

Am just looking at the moro website. Looks very very lovely

Oooh - was at Moro last month. Just had tapas at the bar (as had DS - 8 months in sling and couldn't sit down!)

Had chicken in a lovely almond sauce... and a ton of babaganoush and white sherry....

Agree Moro cook books are fab - they have 3 actually and all are excellent. Personally tend towards the more Spanish stuff - also Thomasina Miers did a Series on Spain too and that had similar stuff in.

Once did a 9 course meal (New Years Eve) out of Moro books - all went down with a by all.

I love Moroccan food and recommend Claudia Roden's book on Middle Eastern food too. Moro cook books good but had crap food there - although most friends love it.

Also love to use the following ingredients;

Pomegranate Molases - tartish flavour - can add to dressings and such like too
Sumac - dried crushed red berries with a sour lemon type flavour
Preserved lemons - you can make yourself - although bought ones are the small sizes which i haven't been able to source
Rosh-El-Hanout - a fragrant blend of spices includes some of the spices you mentioned but has even more in it!
Za'atar - thyme, sesame seeds & Sunmac - very delish

I think you can buy all from Sainsbo' deli section or spices try on line like this site.

I think I'll get one of those Moro books. Sadly no restaurant near here.

Do the Moro books have menu suggestions? I need to do a dinner party for the finals night of Strictly Come Dancing (don't ask) and thought I should do something Moroccan.

What should I do?

recipes online are rubish unless you go to moroccan websites and that's going to be in french

your best bet is to google jewish moroccan recipes. they usually are proper traditional recipes

perfect thread - i'm cooking dinner for my lovely neighbours in a couple of weeks and just spotted the potato, shallot & goats cheese tarts with herb salad (dressing????), mmm so will do that as starter. Then i'm doing a spicy lamb tagine for the main with couscous. Sounding ok so far?

What about dessert, something light and refreshing me thinks but I don't know any morrocan ones. Does anyone have anything simple and delicious?
