What is themoat easiet sponge recipe?

I want to bake a cake and ice it for my dd's birthday and I am a complete novice

Get four eggs. Weigh out the same weight as tghe eggs in caster sugar, Self raising flour and butte.

Pre-heat oven to 200c
Grease two sandwich tins.

Cream the butter an sugar with an electric mixer.
Add eggs one at a time mixing thouroughly.
Sieve in the flour and fold in gently.

Put half and half in the sandwich tins then bake for about 20 mins or until it smells right/the cake springs back up when you touch the middle.

Jam in the middle. Icing on top. Classic victoria sponge.

you can also add a bit of vanilla to that. or sometimes i blend in a banana.

very easy and very good recipe IMO!!

I tried one where it said to mix mascarpone and fromage frias and put in the middle but it went everywhere

although having said that I sometimes put double cream (whipped) and halved strawberries in middle

no icing on that though

Oh and when I tried it yesterday my two cakes didnt turn out round, they were very misshaped because of the baking paper I had lined the tins with

You only need to line the bottom of the tin, not the sides - just make sure the sides are well greased.

I don't bother with lining .... but then my sandwich tins are non stick.

If you don't want the paper to crease, grease it underneath and just cut a circle to line the bottom. It doesn't need to go on the sides.

could I just add instant coffee and walnuts to this to make coffee and walnut cake? Just want something really aesy I could bung in the processor and shove in oven!

I do Mary Berrys all in one victoria sponge

4 large eggs
8oz self-raising
1tsp baking powder
8oz caster sugar
8oz butter/marj

bung it all in the food processor, whizz and put into two 8" tins (that are lined and greased around the sides).

my oven is a fan one, so I do these at 160 although it does say 180 in her book.

I use jam and chantilly cream.
