Need a really good veggie lasagne recipe

Want something that's going to wow with taste please! I'm used to cooking meat lasagne, but got veggies coming for lunch and want to do something seriously yummy but that I can just whack in the oven and forget about.

What about mushroom? There is a great one in Nigel slater's Kitchen Diary. Basically get your lasagne and make a white or cheese sauce then for the filling, fry up loads of mushroom (use any kind by I think chestnut are good for this one) in some butter, then add double cream (yum) and some chopped flat leaf parsley. Then once you have put it all together, spread some pesto over the top layer of the lasagne and then another layer of the white sauce. Nige recommends making the pesto yourself, but shop bought is nice too. in fact I often make this without the pesto and it is loved by veggies and non-veggies alike!

Delia has a lovely 4 cheese and spinach one with pine nuts.

I also have recipe for a mushroom nad spinach one I make quite a lot - let me know if you would like either of them.

argh, thank you but I forgot to say in my OP one of the other guests doesn't eat mushrooms. I think that sounds delish but won't fit the bill on this occasion. Thank you though, might just try that another time!

another good one is with puy (dark green) lentils. You cook exactly as for your meat one, but add these lentils instead of the mince. You'll need about 40 mins to cook the 'meat' sauce. Add dark soy to it too, and some fresh corriander. Then make as for normal lasagne. I'm not veggie but have this all the time and everyone loves it. It looks like a meat lasagne so works for all types of eaters. Good for chilli and bolognese too.

ok, explain to me why it says "a vegetarian parmesan-like and ricotta-like cheese are available here..." why aren't normal ones veggie?

re the cheeses, I think some cheeses might have animal rennet (sp) in them, so though they're made with milk they are not truly vegetarian.

Just as an alternative, what about a big pan of risotto? I've just made Jamie's spicy squash one tonight and it was very tasty.

I often make the roasted veg one but forgot to skin the tomatoes when I made it last week. It wasn't as nice as the skins were slightly better and the texture not very nice.

oh right, so I need to look for vegetarian cheeses then? gosh, I really didn't know that. I only have one veggie friend that I normally cook for, I really hope I haven't given her an animal cheese in the past, I didn't know

I think I'm going with the two lasagnes as I can just make them before they come and then just put them in the oven and forget about them whilst I deal with the 6 kids in my house!
