Good ideas of things to bake for packed lunches...beyond flapjack and brownies!

My DC are sick of flapjack and brownies (so am I ) so I thought I'd bake some new bits for lunches today.

Scones go dry I think so not scones...any ideas please?

make your own cookies - just plain shortbread biscuits are easy to make, I always also reduce the amount of sugar it says in the recipee, they still taste yummy.

Hmm...Totally forgot about carrot cake. That would up the veg quotient a bit for the day now that they're not on school dinners!

And muffins are great for adding fruit and other healthy bits too, great!

What are American style cookies? Are they the gooey ones?

banana bread

rachel allens loaf cake (like a sponge but a bit denser - i do a lemon one then cut slices off or a plain one or a coffee one)

I do a wide range of fruit and veg based cakes - banana cake, pear cake, apple cake, pumpkin and orange (great, but a faff), lemon courgette. All are tasty, and lunchbox-friendly.

the rachel allen one is a madeira cake

denser and more buttery than a sponge and easy to slice - keeps well too

Another vote for banana bread, I add sultanas and apricots to up the fruit.
I make one a week and freeze half.

Actually, I used to, DS1 is now on school dinners, as from today .

Savory muffins always goes down well for me ie cheese and ham or tuna and sweetcorn.
Banana bread or muffins is another favourite too.

have been trying to find rachel allen one (it is in rachel's favourite food for friends) and cannot find it. Would recommend the whole book though if you are feeling flush!

I make delicious savoury bread sticks which freeze brilliantly.

Basically, you make up a normal bread dough and let it rise once (or set your breadmaker to the dough setting.

Then, roll it out to about 1cm thick all over. Mark a line down the centre. Spread marmite on one side and cover liberally with grated cheese.

Fole the other side of the bread over and roll lightly with a rolling pin.

Cut into strips and twist as you place them on a greased baking tray.

Leave to rise in a warm place for about 20 mins.

Bake in the oven.

Try to get them into the freezer before they get eaten by everyone!

Meant to say - you can spread tomato puree or smooth vegetable sauce on instead of the marmite.

They are a sort of mixture between pizza and sandwiches.

Pumpkin and Orange.

They're all from the same site - and you can search by ingredients. NB: there are user reviews for recipes, I only use recipes from this site that have lots of good reviews. I've never had a recipe go wrong from there.
