Vegetable Nuggets?

A couple of years ago (and pre-children) I went to a bbq of a friend-of-a-friend type person. There were lots of children there and she had made for them things which I am guessing were 'vegetable nuggets' - They were fab!

Given that I don't really know this person and they may well have left the country by now I will have to rely on mn to provide the answers - does anyone have a recipe for these? Or something similar?

Boil and mash veg (carrots, peas, potatoes etc), cool, mush into nuggety shapes, coat in flour, egg and breadcrumbs and then stick in oven. Is that the kind of thing you mean?

Yes I think that sounds like the thing...

Ooh remind me - is it flour THEN egg THEN breadcrumbs in that order?

It is. I use matzo meal as never have bread left when I need it - also use it for homemade fish fingers/chicken nuggets

Not the same but falafels are lovely, my DC love them in pitta or wrapped flatbread with hummous and salad

We've used this recipe from Aitch's baby-led weaning blog. It's fab, great for quick meals or picnics and uses up random freezer veg. My DD loves them.

Yeah, we make them in those silicone mini-muffin trays. That way once done we pop out a few for immediate use then the whole tray goes in the freezer (once cool of course). When frozen they can be popped out and put in a bag, that way they don't stick together.
