Curry for a 11 mth old - how do I make it?

Right, I've got some sweet potatoes, a butternut squash, some coconut milk, mild curry powder and a tiny bit of fresh ginger. How do I make a curry for my 11mth old that I can batch cook and freeze?

i would add creamy natural yoghurt but i dont think you can freeze that once cooked

thanks st, but if I'm gonna go to the trouble of making a curry from scratch I gotta be able to make a lot at one time!

thanks guys. Would I be able to just zap this in the microwave to reheat it after I'd defrosted it? Or could I even reheat it from frozen?

you can reheat from frozen in pan or in microwave.

When ds was tiny, I used to stir in cheese and cook though till melted or stir in yogurt (did either of these when I was reheating) to take the heat out as I just fed him the curries I made for dp.

I just stick a can of coconut milk on the stove, add veg, lentils, spices, etc and simmer over a really low heat until all is cooked and it's a good consistency.

Mine always freezes well, and I defrost in microwave.

mochan, do you put curry powder in that? - how long do lentils take to cook?

Sorry, didn't see I'd been asked a question. The lentils only take about 20 mins to soften, but If you were going to do it this way, I'd suggest putting it on a low heat and simmer for a good amount of time, 40mins plus.

I just different add spices (but including those that would appear in curry powder). They'd include cumin seed, fennel seed, turmeric, fenugreek, coriander seed, mustard seed, fresh ginger, possibly some curry leaves and garlic. But as I say, it's essentially just what you'd find in a standard curry powder or bought paste, I just tend to make my own blends/pastes etc, because I am a big curry fan and make it a lot...
