If I simmer a soup will it thicken up?

Have made leek and potato soup, it smells gorgeous. It's too thin though and DD hates thin soup as she can't use a spoon very well yet. I already reduced the liquid in the recipe but obv not enough. Will it thicken if I leave it to simmer? Thanks.

You could chuck a few more tatties in and boil it up again? Or cook them first?

And keep stirring. All that starch will catch quite easily if you aren't careful.

When you serve it, cut some bread up into lots of squares & pour the soup over them - that way if it's a bit runny it doesn't matter & it is much easier to eat

I've grated another spud in and it seems a bit thicker, will simmer a bit more and see what happens. That's a good idea KatyMac, will do that tomorrow. Thanks everybody.

Will a touch f cornflour mix ruinn it...tis another obvious way to thicken it.

You can add a roux which is melted butter and flour mixed together ( teaspoon of it should do the trick) or a little cornflour mixed with cold water.

Or take some of the potato out once it is cooked and blitz it in a food processor as this will develop the gluten and thicken it up... add it back to the main soup.

If you only need it a little thicker whisking in small amounts of cold butter will also thicken it and leave it nice and glossy.

I blitzed mine with stick blender thingumy yesterday to make it easier for the lo, still tastes yummy

I would keep stirring it really hard to break some of the potatoes up - that will help thicken it.

I only meant that starch tends to burn quite easily and that you need to keep it moving as it thickens.

I've blitzed it and added grated potato and it's thickened a bit but might add a roux as well. Thankyou! You watch I'll give it to her tomorrow and she probably won't touch it now
